How To Make Salmon Pasta Salad with Lemon & Capers

Ingredients
- 8 oz pasta
- 1 lb salmon fillets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 2 tbsp capers, drained
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions

Cook the pasta according to package instructions. Drain and set aside.

Season the salmon fillets with salt and pepper. In a large skillet, heat the olive oil over medium heat.

Add the salmon fillets to the skillet and cook for 3-4 minutes per side, or until cooked through. Remove from the skillet and let cool.

In a large bowl, mix together the minced garlic, lemon juice, capers, and parsley. Season with salt and pepper.

Flake the cooled salmon into small pieces and add to the bowl with the lemon-caper dressing.

Add the cooked pasta to the bowl and toss until well coated. Adjust seasoning if necessary.

Serve the salmon pasta salad chilled or at room temperature.
