Ingredients

  • 8 oz orzo pasta
  • 8 cups baby spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let it cool.

  2. In a large mixing bowl, combine the cooked orzo pasta, baby spinach, cherry tomatoes, red onion, basil leaves, and feta cheese.

  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  4. Drizzle the dressing over the salad and toss to combine.

  5. Serve the spinach and orzo salad chilled or at room temperature.
