  • 8 oz pasta, any shape
  • 2 cups cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup pickled jalapenos, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Drain and rinse with cold water to cool it down.

  2. In a large bowl, combine the cooked pasta, cherry tomatoes, black olives, red onion, basil leaves, pickled jalapenos, and feta cheese.

  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.

  4. Serve the hot pasta salad immediately or refrigerate for a few hours to let the flavors meld together.
