How To Make Herby Orzo & Lemon Salad

Ingredients
- 1 cup of orzo pasta
- 1 lemon, juiced and zested
- 3 tablespoons of olive oil
- 2 tablespoons of fresh herbs (such as parsley, basil, and dill), chopped
- 1 cup of cherry tomatoes, halved
- 1/4 cup of red onion, thinly sliced
- Salt and pepper, to taste
Instructions

Cook the orzo pasta according to package instructions. Drain and set aside to cool.

In a small bowl, whisk together the lemon juice, lemon zest, olive oil, and salt and pepper.

In a large bowl, combine the cooked orzo, cherry tomatoes, red onion, and fresh herbs.

Pour the lemon dressing over the orzo mixture and toss until well combined.

Taste and adjust seasoning if needed.

Serve the herby orzo salad chilled or at room temperature.
