Ingredients

  • 4 large potatoes, washed and cut into wedges
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon black pepper
  • 1 cup yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon curry powder
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the vegetable oil, salt, paprika, garlic powder, onion powder, curry powder, and black pepper.

  3. Add the potato wedges to the bowl and toss until coated in the spice mixture.

  4. Arrange the coated potato wedges on a baking sheet in a single layer.

  5. Bake in the preheated oven for 20-25 minutes, or until the wedges are golden brown and crispy.

  6. While the potato wedges are baking, prepare the curry sauce. In a small bowl, whisk together the yogurt, mayonnaise, curry powder, lemon juice, honey, salt, and black pepper until well combined.

  7. Once the potato wedges are cooked, remove them from the oven and let them cool slightly.

  8. Serve the potato wedges hot with the curry sauce on the side for dipping. Garnish with chopped fresh cilantro.
