How To Make Slow-cooked Celeriac with Pork & Orange

Ingredients
- 1 celeriac, peeled and cut into chunks
- 500g pork shoulder, diced
- 1 orange, zest and juice
- 2 cloves of garlic, minced
- 1 onion, finely chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 500ml vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Heat the olive oil in a large skillet over medium heat. Add the pork and brown it on all sides. Transfer the pork to a slow cooker.

In the same skillet, add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened and lightly browned. Add them to the slow cooker.

Add the celeriac chunks, orange zest, and orange juice into the slow cooker. Season with salt and pepper.

Pour the vegetable broth into the slow cooker. Cover and cook on low heat for 4 hours, or until the pork is tender and the celeriac is cooked through.

Serve the slow-cooked celeriac with pork and orange hot, garnished with fresh parsley.
