Ingredients

  • 500g new potatoes, quartered
  • 2 cans of tuna in water, drained
  • 1 red onion, thinly sliced
  • 2 tbsp capers, drained
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup olive oil
  • 2 tbsp white wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and set aside to cool.

  2. In a large bowl, mix together the potatoes, tuna, red onion, capers, parsley, and chives.

  3. In a small bowl, whisk together the olive oil and white wine vinegar. Season with salt and pepper.

  4. Pour the dressing over the salad and toss to combine.

  5. Serve chilled.
