  • 1 lb. new potatoes
  • 2 tbsp. olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F.

  2. Wash and dry the new potatoes, then slice them in half.

  3. In a mixing bowl, combine olive oil, minced garlic, grated parmesan cheese, salt, and black pepper.

  4. Add the potatoes to the bowl and toss to coat.

  5. Arrange the coated potatoes on a baking sheet lined with parchment paper.

  6. Bake for 30 minutes, flipping halfway through, until the potatoes are crispy and golden brown.

  7. Serve hot, garnished with fresh parsley if desired.
