If you didn’t already know, new potatoes are spuds harvested before they’re fully grown. As a result, they are small, tender, and thin-skinned. Ingredients
- 1.5 lbs new potatoes, halved
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 425°F (220°C).

In a large bowl, toss the halved new potatoes with olive oil, smoked paprika, garlic powder, salt, and black pepper until well coated.

Spread the potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 25 minutes, or until golden brown and crispy, stirring once halfway through.

Remove from the oven and garnish with fresh parsley.
