If you didn’t already know, new potatoes are spuds harvested before they’re fully grown. As a result, they are small, tender, and thin-skinned. And just like mature-potatoes, you can turn these tubers into the perfect side dish for fish, chicken, and more! They’re delicious when roasted or boiled with even just a few herbs and spices. Ingredients

  • 1.5 lbs new potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, toss the halved new potatoes with olive oil, smoked paprika, garlic powder, salt, and black pepper until well coated.

  3. Spread the potatoes in a single layer on a baking sheet.

  4. Roast in the preheated oven for 25 minutes, or until golden brown and crispy, stirring once halfway through.

  5. Remove from the oven and garnish with fresh parsley.

  6. Serve hot and enjoy!
