Ingredients

  • 1 pie crust
  • 1 lb new potatoes, sliced thinly
  • 8 oz mushrooms, sliced
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a skillet, heat olive oil over medium heat. Add onion and garlic and sauté until softened.

  3. Add mushrooms and sauté until golden brown.

  4. Add sliced potatoes, thyme leaves, salt, and pepper. Cook for another 5 minutes.

  5. Roll pie crust and place it on a baking sheet.

  6. Place potato and mushroom mixture on top of the pie crust, leaving a 1-inch border around the edges.

  7. Fold the edges of the pie crust over the filling and brush with egg wash.

  8. Bake for 30-35 minutes, until the crust is golden brown and the potatoes are cooked through.

  9. Let galette cool for a few minutes before serving.
