Ingredients

  • 1 lb new potatoes, quartered
  • 6 slices bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil and butter in a skillet over medium heat.

  2. Add bacon and cook for 5-7 minutes or until crispy.

  3. Add onion and garlic and cook until onion is translucent.

  4. Add the potatoes and cook for 15-20 minutes or until crispy and tender.

  5. Season with salt and pepper to taste.

  6. Garnish with chopped parsley.
