Ingredients
- 1.5 lbs pork tenderloin, cut into small cubes
- 1 cup pineapple chunks
- 1 onion, sliced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
Instructions

In a large skillet, heat vegetable oil over medium heat.

Add pork cubes and cook until browned on all sides, about 5 minutes.

Add onion, red bell pepper, and garlic to the skillet. Cook until vegetables are softened, about 3 minutes.

In a small bowl, mix together ginger, cumin, paprika, chili powder, salt, and black pepper. Sprinkle the spice mixture over the pork and vegetables. Stir well to coat.

Add pineapple chunks to the skillet and cook for an additional 3 minutes, until heated through.

Reduce heat to low, cover the skillet, and let simmer for 20-25 minutes, until pork is cooked through and tender.
