How To Make Herb Rolled Pork Loin with Crackling

  • 2 lb pork loin
  • 1 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup bread crumbs
  • 1/4 cup vegetable oil


  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together olive oil, rosemary, thyme, garlic, salt, and black pepper.

  3. Rub the herb mixture all over the pork loin, making sure to coat it evenly.

  4. Roll the pork loin tightly and tie it with kitchen twine to secure.

  5. Place the pork loin on a baking tray and roast in the preheated oven for 45 minutes.

  6. Meanwhile, heat vegetable oil in a large skillet over medium heat.

  7. Add the bread crumbs to the skillet and cook until golden brown and crispy, stirring frequently.

  8. Remove the pork loin from the oven and spread the crispy bread crumbs over the top.

  9. Return the pork loin to the oven and continue roasting for an additional 15 minutes, or until the internal temperature reaches 145°F (63°C).

  10. Remove the pork loin from the oven and let it rest for 10 minutes before slicing.

  11. Serve the herb rolled pork loin with crackling slices and enjoy!
