How To Make Portobello & Blue Cheese Melts

Ingredients

  • 4 large Portobello mushrooms
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 oz blue cheese, crumbled
  • 4 slices of crusty bread
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat your grill or oven to medium-high heat.

  2. Clean the Portobello mushrooms and remove the stems.

  3. Brush the mushrooms with olive oil and season with salt and pepper.

  4. Grill or bake the mushrooms for about 8-10 minutes per side, until they are tender and juicy.

  5. While the mushrooms are cooking, toast the slices of bread until golden brown.

  6. Once the mushrooms are done, remove them from the grill or oven and place them on a baking sheet.

  7. Sprinkle the crumbled blue cheese on top of each mushroom.

  8. Broil the mushrooms for 2-3 minutes, until the cheese is melted and bubbly.

  9. Remove the mushrooms from the oven and let them cool for a few minutes.

  10. Place each mushroom on a slice of toasted bread and garnish with fresh thyme leaves.

  11. Serve the Portobello & Blue Cheese Melts warm and enjoy!
