Ingredients
- 1 small cauliflower, cut into florets
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- 2 eggs, beaten
- Vegetable oil, for frying
- herby dipping sauce:
- 1/2 cup Greek yogurt
- 1/4 cup chopped fresh herbs (such as parsley, dill, and chives)
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions

In a large pot of salted boiling water, cook the cauliflower florets until tender, about 5 minutes. Drain and let cool.

In a mixing bowl, combine the flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

Dip each cauliflower floret into the beaten eggs, then coat with the flour mixture.

In a skillet, heat enough vegetable oil to cover the bottom over medium heat. Fry the cauliflower fritters in batches until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

To make the herby dipping sauce, mix together the Greek yogurt, chopped fresh herbs, lemon juice, salt, and pepper in a small bowl.

Serve the cauliflower fritters hot with the herby dipping sauce on the side.
