Ingredients

  • 1 small cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • herby dipping sauce:
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped fresh herbs (such as parsley, dill, and chives)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large pot of salted boiling water, cook the cauliflower florets until tender, about 5 minutes. Drain and let cool.

  2. In a mixing bowl, combine the flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

  3. Dip each cauliflower floret into the beaten eggs, then coat with the flour mixture.

  4. In a skillet, heat enough vegetable oil to cover the bottom over medium heat. Fry the cauliflower fritters in batches until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

  5. To make the herby dipping sauce, mix together the Greek yogurt, chopped fresh herbs, lemon juice, salt, and pepper in a small bowl.

  6. Serve the cauliflower fritters hot with the herby dipping sauce on the side.
