How To Make Vegan Courgette Cake

Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients

  • 1 medium courgette, grated
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.

  2. In a large bowl, combine the grated courgette, flour, sugar, vegetable oil, applesauce, baking powder, baking soda, cinnamon, and salt. Mix well until the batter is smooth.

  3. If using walnuts, fold them into the batter.

  4. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  5. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  6. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  7. Once cooled, slice and serve.
