How To Make Ground Pork and Butternut Squash Stir-Fry Recipe

Ingredients
- 1 lb ground pork
- 2 tbsp vegetable oil
- 1 small butternut squash, peeled and diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp soy sauce
- 1 tbsp cornstarch
- Salt and pepper to taste
- Cooked rice for serving
Instructions

In a large skillet or wok, heat oil over medium-high heat. Add ground pork and cook, breaking it up with a wooden spoon, until browned and cooked through.

Add diced butternut squash, onion, garlic, and ginger to the skillet. Stir to combine.

In a small bowl, whisk together soy sauce and cornstarch. Pour mixture over pork and squash, and stir to combine.

Cover and cook for 10-15 minutes, until squash is tender and pork is fully cooked.

Season with salt and pepper to taste.

Serve over cooked rice.
