How To Make Chef John’s Chicken and Mushrooms Recipe

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 1/4 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tbsp Dijon mustard
  • 2 tbsp chopped fresh parsley


  1. Season the chicken breasts with salt, black pepper, paprika, garlic powder, and dried thyme.

  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, until browned and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add the sliced mushrooms and cook for 3-4 minutes, until they release their moisture and start to brown. Add the chicken broth and scrape any browned bits from the bottom of the skillet.

  4. Stir in the heavy cream and Dijon mustard. Cook for 2-3 minutes, until the sauce thickens slightly.

  5. Return the chicken breasts to the skillet and cook for an additional 2-3 minutes, until heated through and coated with the sauce.

  6. Serve the chicken and mushrooms garnished with chopped fresh parsley.
