  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 4 cups club soda or sparkling water, chilled
  • Ice cubes
  • Fresh strawberries, for garnish

Instructions

  1. In a medium saucepan, combine the sliced strawberries, sugar, water, lemon juice, vanilla extract, and almond extract (if using). Stir well to combine.

  2. Place the saucepan over medium heat and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 10-15 minutes, or until the strawberries are soft and the mixture has thickened slightly.

  3. Remove the saucepan from heat and let the syrup cool for a few minutes. Then, strain the mixture through a fine-mesh sieve to remove any strawberry seeds and pulp. Allow the syrup to cool completely.

  4. To serve, fill each glass with ice cubes. Pour about 1/4 cup of the strawberry syrup into each glass. Top with chilled club soda or sparkling water, and stir gently to combine. Garnish with fresh strawberries.

  5. Serve immediately and enjoy!
