Ingredients

  • 8 parsnips, peeled and quartered lengthwise
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pecans, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the parsnips with the olive oil, maple syrup, salt, and black pepper until well coated.

  3. Arrange the parsnips in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and golden brown, flipping halfway through.

  4. In a small saucepan, toast the pecans over medium heat for 2-3 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat.

  5. Once the parsnips are done, transfer them to a serving dish and sprinkle with the toasted pecans.

  6. Serve immediately and enjoy!
