Ingredients

  • 1 bunch of asparagus, trimmed
  • 1 cup of peas, fresh or frozen
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Juice of 1 lemon
  • 1/4 cup of grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. On a baking sheet, toss the asparagus with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and black pepper. Spread them out in a single layer.

  3. Roast the asparagus in the preheated oven for 10-12 minutes, until tender but still crisp.

  4. In a pot of boiling water, cook the peas for 2-3 minutes if using fresh peas or 5-6 minutes if using frozen peas. Drain and rinse with cold water to stop the cooking process.

  5. In a large bowl, combine the roasted asparagus, cooked peas, remaining 1 tablespoon of olive oil, lemon juice, and remaining 1/2 teaspoon of salt. Toss until well coated.

  6. Sprinkle with grated Parmesan cheese.

  7. Serve immediately and enjoy!
