How To Make Sticky Orange Chicken with Parsnips, Maple & Pecans

Ingredients
- 4 chicken breasts, boneless and skinless
- 4 parsnips, peeled and sliced
- 1 orange, zest and juice
- 3 tbsp maple syrup
- 1/2 cup pecans, chopped
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- Salt and pepper, to taste
- Vegetable oil, for cooking
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, whisk together the orange juice, zest, maple syrup, soy sauce, cornstarch, salt, and pepper.

Heat some vegetable oil in a large oven-safe skillet over medium-high heat.

Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 4-5 minutes per side until browned.

Remove the chicken from the skillet and set aside.

Add the parsnips to the skillet and cook for 2-3 minutes until slightly softened.

Return the chicken to the skillet and pour the orange mixture over the chicken and parsnips.

Sprinkle the chopped pecans over the chicken.

Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and the sauce is sticky.

Serve the sticky orange chicken with parsnips, maple & pecans with steamed rice or roasted vegetables.
