  • 4 large parsnips, peeled and cut into 1-inch thick sticks
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the maple syrup, olive oil, sea salt, and black pepper. Add the parsnip sticks and toss until they are evenly coated.

  3. Spread the parsnips in a single layer on a baking sheet lined with parchment paper.

  4. Roast in the preheated oven for 20-25 minutes, or until the parsnips are golden brown and tender, turning them once halfway through.

  5. Remove from the oven and garnish with fresh parsley.

  6. Serve the salted maple-roasted parsnips as a side dish and enjoy!
