  • 2 delicata squash
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme


  1. Preheat the oven to 425°F (220°C).

  2. Cut the delicata squash in half lengthwise, then scoop out the seeds and discard.

  3. Slice the squash into half-inch thick half-moon shapes.

  4. In a large bowl, toss the squash with olive oil, salt, black pepper, and dried thyme until evenly coated.

  5. Spread the squash slices in a single layer on a baking sheet.

  6. Roast in the preheated oven for 20-25 minutes, or until the squash is tender and caramelized.

  7. Serve hot and enjoy!
