Ingredients
- 2 delicata squash
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
Instructions

Preheat the oven to 425°F (220°C).

Cut the delicata squash in half lengthwise, then scoop out the seeds and discard.

Slice the squash into half-inch thick half-moon shapes.

In a large bowl, toss the squash with olive oil, salt, black pepper, and dried thyme until evenly coated.

Spread the squash slices in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the squash is tender and caramelized.
