How To Make Rhubarb Muffins

Sweet and tangy rhubarb muffins that are perfect for breakfast or as a snack.

Serves:

Ingredients

  • 1 1/2 cups of all-purpose flour
  • 1/2 cup of sugar
  • 2 tsp of baking powder
  • 1/4 tsp of salt
  • 1/2 cup of milk
  • 1/4 cup of vegetable oil
  • 1 egg
  • 1 cup of rhubarb, chopped

Instructions

  1. Preheat oven to 375°F.

  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, and egg.

  4. Add the wet ingredients to the dry ingredients and mix until combined.

  5. Fold in the chopped rhubarb.

  6. Scoop the batter into a greased muffin tin, filling each muffin cup 3/4 full.

  7. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.

  8. Allow muffins to cool for 5 minutes before removing from the tin.
