How To Make Lentil and Mushroom Risotto Recipe

Serves:

Ingredients

  • 1 cup of dried green lentils
  • 4 tbsp of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of Arborio rice
  • 4 cups of vegetable broth
  • 1 cup of sliced mushrooms
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Rinse lentils and set aside.

  2. Heat olive oil in a large pot over medium heat.

  3. Add onion and garlic, sauté for 2-3 minutes.

  4. Add Arborio rice and cook for 2-3 minutes, stirring constantly.

  5. Add lentils and broth. Bring to a boil, then reduce heat and let it simmer for 25-30 minutes, or until lentils and rice are tender.

  6. In a separate pan, sauté mushrooms until golden brown.

  7. Add mushrooms and Parmesan cheese to the lentil and rice mixture.

  8. Season with salt and pepper to taste.

  9. Serve hot.
