How To Make Lentil and Mushroom Risotto Recipe
A hearty, vegetarian dish that’s perfect for a cozy evening in.
Serves:
Ingredients
- 1 cup of dried green lentils
- 4 tbsp of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of Arborio rice
- 4 cups of vegetable broth
- 1 cup of sliced mushrooms
- 1/2 cup of grated Parmesan cheese
- Salt and pepper, to taste
Instructions

Rinse lentils and set aside.

Heat olive oil in a large pot over medium heat.

Add onion and garlic, sauté for 2-3 minutes.

Add Arborio rice and cook for 2-3 minutes, stirring constantly.

Add lentils and broth. Bring to a boil, then reduce heat and let it simmer for 25-30 minutes, or until lentils and rice are tender.

In a separate pan, sauté mushrooms until golden brown.

Add mushrooms and Parmesan cheese to the lentil and rice mixture.

Season with salt and pepper to taste.
