How To Make Lentil and Tomato Pasta Recipe
A hearty vegetarian pasta dish packed with protein-rich lentils and tangy tomato sauce.
Serves:
Ingredients
- 8 oz of pasta
- 1 tbsp of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of dried lentils
- 1 can of crushed tomatoes
- 2 cups of vegetable broth
- 1 tsp of dried basil
- Salt and pepper to taste
- Parmesan cheese for topping (optional)
Instructions

Cook pasta according to package instructions and set aside.

In a large pot, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes.

Add dried lentils, crushed tomatoes, vegetable broth, dried basil, salt, and pepper. Stir to combine.

Bring the mixture to a boil and then reduce heat to low and simmer for 20-25 minutes or until lentils are tender.

Serve lentil mixture over cooked pasta and top with parmesan cheese if desired.
