How To Make Lentil and Tomato Pasta Recipe

A hearty vegetarian pasta dish packed with protein-rich lentils and tangy tomato sauce.

Serves:

Ingredients

  • 8 oz of pasta
  • 1 tbsp of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of dried lentils
  • 1 can of crushed tomatoes
  • 2 cups of vegetable broth
  • 1 tsp of dried basil
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Cook pasta according to package instructions and set aside.

  2. In a large pot, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes.

  3. Add dried lentils, crushed tomatoes, vegetable broth, dried basil, salt, and pepper. Stir to combine.

  4. Bring the mixture to a boil and then reduce heat to low and simmer for 20-25 minutes or until lentils are tender.

  5. Serve lentil mixture over cooked pasta and top with parmesan cheese if desired.
