How To Make Lentil and Walnut Salad

A refreshing salad made with protein packed lentils and crunchy walnuts, dressed in a tangy vinaigrette.

Serves:

Ingredients

  • 1 cup of green lentils, cooked
  • 1/2 cup of walnuts, chopped
  • 2 stalks of celery, chopped
  • 1/4 red onion, chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 3 tbsp of apple cider vinegar
  • 1 tbsp of honey
  • 1 tbsp of dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine the cooked lentils, walnuts, celery, red onion and parsley.

  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey and dijon mustard. Season with salt and pepper to taste.

  3. Pour the dressing over the lentil mixture and toss to evenly coat.

  4. Serve chilled.
