Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable broth
  • 1 cup red lentils
  • 3 cups chopped kale
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot. Add onions and garlic and cook until onions are soft.

  2. Add carrots and celery and cook until vegetables are tender.

  3. Add cumin, smoked paprika, and cayenne pepper. Stir to combine.

  4. Add vegetable broth, lentils, and kale. Bring to a boil then reduce heat and let simmer for 20 minutes.

  5. Season with salt and pepper to taste.
