How To Make Lentil and Spinach Salad

A refreshing salad with tender lentils and healthy spinach.

Serves:

Ingredients

  • 1 cup green lentils
  • 4 cups baby spinach
  • 1 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse and drain lentils. Cook in a pot of boiling water for 25 minutes or until tender. Drain and set aside.

  2. In a large bowl, combine spinach, onion, cherry tomatoes, avocado, and feta cheese.

  3. In a separate small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.

  4. Add the cooked lentils to the salad bowl and drizzle with the vinaigrette. Toss to combine.

  5. Serve immediately and enjoy!
