  • 500g green beans (trimmed and halved)
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 2 cloves of garlic (minced)
  • 2 tomatoes (diced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Heat the olive oil in a large pan over medium heat. Add the onion and garlic and sauté until translucent.

  2. Add the green beans to the pan and cook for 5 minutes, stirring occasionally.

  3. Stir in the tomatoes, oregano, thyme, salt, and pepper. Reduce the heat to low, cover the pan, and simmer for 35-40 minutes until the beans are tender.

  4. Once cooked, remove from heat and garnish with fresh parsley.

  5. Serve hot as a main dish or as a side with crusty bread.
