  • 8 oz rigatoni
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach leaves
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the rigatoni according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

  3. Stir in the heavy cream and bring to a simmer. Cook for 3-4 minutes until slightly thickened.

  4. Stir in the grated Parmesan cheese until melted and creamy.

  5. Add the fresh spinach leaves and cook for 2-3 minutes until wilted.

  6. Season with salt and pepper to taste.

  7. Add the cooked rigatoni to the skillet and toss to coat in the creamy sauce.

  8. Cook for an additional 2-3 minutes until heated through.

  9. Serve the creamy rigatoni Florentine hot, garnished with extra grated Parmesan cheese.
