Ingredients
- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 jalapeno pepper, seeded and diced
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salsa, for serving
Instructions

In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

Add the diced onion, bell pepper, garlic, and jalapeno pepper to the skillet with the beef. Cook until the vegetables are softened.

Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for another 2 minutes to allow the flavors to blend.

Warm the flour tortillas in a separate skillet or in the microwave until pliable.

Place a spoonful of cooked rice, black beans, and the beef mixture onto each tortilla. Top with shredded cheddar cheese, sour cream, and cilantro.

Roll up the tortillas tightly, tucking in the sides as you go.
