How To Make Sweet Chilli Prawn Stir-Fry

Ingredients

  • 500g prawns, peeled and deveined
  • 3 tbsp sweet chilli sauce
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • Salt and pepper to taste
  • Spring onions, chopped for garnish

Instructions

  1. In a small bowl, whisk together sweet chilli sauce, soy sauce, honey, cornstarch, and a pinch of salt.

  2. Heat vegetable oil in a large frying pan or wok over medium-high heat.

  3. Add prawns and stir-fry for 2-3 minutes until pink and cooked through. Remove from pan and set aside.

  4. In the same pan, add the garlic and ginger. Cook for 1 minute until fragrant.

  5. Add the sliced bell peppers and onion. Stir-fry for 3-4 minutes until vegetables are crisp-tender.

  6. Return the prawns to the pan and pour the sweet chilli sauce mixture over them. Stir-fry for an additional 2 minutes until the sauce has thickened and coats the prawns and vegetables evenly.

  7. Season with salt and pepper to taste.

  8. Serve the Sweet Chilli Prawn Stir-Fry hot, garnished with chopped spring onions.
