Ingredients
- 500g prawns, peeled and deveined
- 3 tbsp sweet chilli sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- Salt and pepper to taste
- Spring onions, chopped for garnish
Instructions

In a small bowl, whisk together sweet chilli sauce, soy sauce, honey, cornstarch, and a pinch of salt.

Heat vegetable oil in a large frying pan or wok over medium-high heat.

Add prawns and stir-fry for 2-3 minutes until pink and cooked through. Remove from pan and set aside.

In the same pan, add the garlic and ginger. Cook for 1 minute until fragrant.

Add the sliced bell peppers and onion. Stir-fry for 3-4 minutes until vegetables are crisp-tender.

Return the prawns to the pan and pour the sweet chilli sauce mixture over them. Stir-fry for an additional 2 minutes until the sauce has thickened and coats the prawns and vegetables evenly.

Season with salt and pepper to taste.

Serve the Sweet Chilli Prawn Stir-Fry hot, garnished with chopped spring onions.
