Ingredients
- 200g noodles
- 2 medium aubergines, sliced
- 3 tbsp miso paste
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 2 spring onions, sliced
- 1 red chili, finely chopped
- 1 tbsp vegetable oil
- Sesame seeds, for garnish
Instructions

Cook the noodles according to package instructions. Drain and set aside.

Heat the vegetable oil in a large pan over medium heat. Add the aubergine slices and cook until softened and lightly browned, about 5 minutes.

In a bowl, whisk together miso paste, soy sauce, sesame oil, grated ginger, minced garlic, and chopped chili.

Add the miso mixture to the pan with the aubergines and stir well to coat. Cook for another 2 minutes.

Add the cooked noodles to the pan and toss to combine with the sauce and aubergines. Cook for an additional 2 minutes to heat through.
