Ingredients
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 200g squid rings
- 200g prawns, peeled and deveined
- 1 can of chickpeas, drained and rinsed
- 2 tbsp nduja sausage
- 400g chopped tomatoes
- 500ml fish or vegetable broth
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional)
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

In a large pot, heat oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.

Add squid rings and prawns. Cook until they turn opaque, about 3 minutes.

Stir in chickpeas, nduja sausage, chopped tomatoes, broth, smoked paprika, and chili flakes (if using). Season with salt and pepper.

Bring the stew to a simmer and let it cook for 30 minutes, stirring occasionally.

Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
