How To Make Squid, Prawn & Chickpea Nduja Stew

  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 200g squid rings
  • 200g prawns, peeled and deveined
  • 1 can of chickpeas, drained and rinsed
  • 2 tbsp nduja sausage
  • 400g chopped tomatoes
  • 500ml fish or vegetable broth
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, for garnish


  1. In a large pot, heat oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.

  2. Add squid rings and prawns. Cook until they turn opaque, about 3 minutes.

  3. Stir in chickpeas, nduja sausage, chopped tomatoes, broth, smoked paprika, and chili flakes (if using). Season with salt and pepper.

  4. Bring the stew to a simmer and let it cook for 30 minutes, stirring occasionally.

  5. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
