How To Make Brazilian Prawn & Coconut Stew

Ingredients
- 1 lb prawns, peeled and deveined
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (13.5 oz) coconut milk
- 1 cup fish or vegetable broth
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp chili powder
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion and minced garlic, and sauté until the onion is translucent.

Add the diced red bell pepper and cook for another 2 minutes.

Stir in the tomato paste, paprika, cumin, turmeric, and chili powder. Cook for 1 minute, until fragrant.

Pour in the coconut milk and broth, and bring to a simmer.

Add the diced tomatoes and prawns to the pot, and season with salt and pepper.

Cover and cook for about 10 minutes, until the prawns are cooked through and pink.

Serve the Brazilian Prawn & Coconut Stew over cooked rice and garnish with fresh cilantro.
