How To Make Spicy Chickpea Stew

- 2 cans of chickpeas, drained and rinsed
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 tsp cumin powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 can of diced tomatoes
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium heat. Add the onion, garlic, bell pepper, and jalapeño. Cook until softened, about 5 minutes.

Add the cumin, paprika, and cayenne pepper. Stir well to combine.

Add the chickpeas, diced tomatoes, and vegetable broth to the pot. Season with salt and pepper to taste.
