  • 2 cans of chickpeas, drained and rinsed
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 can of diced tomatoes
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, bell pepper, and jalapeño. Cook until softened, about 5 minutes.

  2. Add the cumin, paprika, and cayenne pepper. Stir well to combine.

  3. Add the chickpeas, diced tomatoes, and vegetable broth to the pot. Season with salt and pepper to taste.

  4. Bring the stew to a boil, then reduce the heat and simmer for 30 minutes, allowing the flavors to meld together.

  5. Serve the spicy chickpea stew hot, garnished with fresh cilantro. Enjoy!
