Ingredients

  • 1 can of chickpeas, rinsed and drained
  • 4 large tomatoes, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a baking dish, combine the chickpeas, tomatoes, onion, garlic, olive oil, dried thyme, dried oregano, salt, and pepper. Mix well to coat everything evenly.

  3. Sprinkle the grated Parmesan cheese over the top of the mixture.

  4. Bake in the preheated oven for 35-40 minutes, or until the tomatoes are soft and the cheese is melted and slightly golden.

  5. Serve hot and enjoy!
