Ingredients
- 4 haddock fillets
- 2 leeks, sliced
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup milk
- 1/2 cup grated cheddar cheese
- 2 cups sweetcorn
- 4 potatoes, peeled and diced
- 2 tbsp butter
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large skillet, melt butter over medium heat. Add leeks and cook until softened.

Sprinkle flour over the leeks and stir for 1 minute. Gradually pour in the milk while stirring constantly until the sauce thickens.

Stir in the grated cheddar cheese until melted and smooth. Remove from heat.

Lay the haddock fillets in a greased baking dish. Pour the leek and cheese sauce over the fish.

Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and the crust is golden and bubbly.

Meanwhile, cook the sweetcorn and potatoes in salted boiling water until tender. Drain and mash with butter, salt, and pepper.

Serve the haddock and leek au gratin alongside the sweetcorn mash.
