Ingredients

  • 1 zucchini, sliced lengthwise
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 4 slices of eggplant
  • 4 slices of tomato
  • 4 whole wheat buns
  • 1/4 cup of olive oil
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper to taste
  • 4 tablespoons of pesto sauce
  • 4 slices of mozzarella cheese

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a bowl, combine the olive oil, balsamic vinegar, salt, and pepper. Mix well.

  3. Brush the zucchini, bell pepper, red onion, eggplant, and tomato slices with the olive oil mixture.

  4. Place the vegetables on the grill and cook for about 5 minutes per side, or until they are tender and have grill marks.

  5. Toast the whole wheat buns on the grill for a minute, until they are slightly crispy.

  6. Spread 1 tablespoon of pesto sauce on each bun.

  7. Place a slice of mozzarella cheese on each bun.
