Provencal Beef Stew Recipe

This slow-cooking stew is an excellent use of the crockpot… and mighty tasty too.

How To Make Provencal Beef Stew

  • 1 1/4 lb. stew beef
  • 4 slices bacon
  • 18 oz. brown gravy
  • 14.5 oz. tomatoes (undrained crushed )
  • 1 tsp. thyme leaves (dried )
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1 small baby carrots
  • 8 new red potatoes (quartered)
  • 2 small onions
  • 8 oz. mushrooms
  1. Cut bacon into 1″ pieces.
  2. Cut onions into 1/8s.
  3. Cook bacon and beef in pan until beef is browned.
  4. Drain.
  5. In crockpot, combine everything else.
  6. Add beef and bacon.
  7. Cover cook until done.
  8. Usually it takes several hours on low heat.

Instructions

  1. Cut bacon into 1" pieces.
  2. Cut onions into eighths.

  3. Cook bacon and beef in pan until beef is browned. Drain.

  4. In crockpot, combine everything else.
  5. Add beef and bacon.
  6. Cover cook until done.
