Ingredients
- 2 pounds lamb stew meat, cut into chunks
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 4 carrots, peeled and sliced
- 2 large potatoes, peeled and cubed
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper, to taste
Instructions

Heat the vegetable oil in a large pot over medium-high heat. Add the lamb stew meat and brown on all sides. Remove from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent.

Stir in the flour and cook for another minute.

Slowly pour in the beef broth, red wine, and tomato paste. Stir until well combined.

Add the browned lamb back into the pot, along with the carrots, potatoes, dried thyme, bay leaves, salt, and pepper.

Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.

Remove the bay leaves before serving.
