- 2 tbsp butter
- 1 onion, finely chopped
- 2 celery stalks, diced
- 2 carrots, diced
- 2 cloves of garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp Old Bay seasoning
- 1 lb fresh oysters, shucked and chopped, reserve the liquor
- Salt and pepper to taste
- Fresh parsley, chopped for garnish

In a large pot, melt the butter over medium heat. Add the onion, celery, carrots, and garlic. Cook until the vegetables are tender, about 5 minutes.
