  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp Old Bay seasoning
  • 1 lb fresh oysters, shucked and chopped, reserve the liquor
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, celery, carrots, and garlic. Cook until the vegetables are tender, about 5 minutes.

  2. Add the chicken or vegetable broth, heavy cream, bay leaf, dried thyme, and Old Bay seasoning. Bring to a simmer and cook for 10 minutes.

  3. Stir in the chopped oysters and their liquor. Cook for an additional 5-7 minutes, until the oysters are cooked through.

  4. Season with salt and pepper to taste.

  5. Serve hot, garnished with fresh parsley.
