Ingredients

  • 4 filet mignon steaks (6 oz each)
  • 1/2 cup crumbled blue cheese
  • 1/4 cup bread crumbs
  • 2 tbsp minced fresh parsley
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1/2 cup beef broth
  • 1/4 cup port wine
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Season the filet mignon steaks with salt and pepper on both sides.

  3. In a small bowl, mix together the blue cheese, bread crumbs, and parsley.

  4. Heat a large oven-proof skillet over high heat and melt the butter.

  5. Sear the filet mignon steaks for 2 minutes on each side to develop a crust.

  6. Remove the skillet from the heat and press the blue cheese mixture onto the top of each steak.

  7. Transfer the skillet to the preheated oven and bake for 8-10 minutes for medium-rare or until desired doneness.

  8. While the steaks are cooking, prepare the port wine sauce. In a small saucepan, combine the beef broth, port wine, and Dijon mustard.

  9. Bring the sauce to a boil, then reduce the heat and simmer for 5-7 minutes until it thickens slightly.

  10. Remove the steaks from the oven and let them rest for a few minutes before serving.

  11. Serve the filet mignon steaks with the port wine sauce drizzled over the top.
