- 1small onion,diced
- 2garlic cloves,minced
- 1cupcarrots,diced
- 4cupscabbage,chopped, approximately ¼ head of cabbage
- 1cupgreen beans,1-inch pieces
- 2bell peppers,chopped
- 28ozdiced tomatoes,1 can, low sodium
- 6cupsbeef broth,low sodium
- 2tbsptomato paste
- 2bay leaves
- ½tspthyme
- ½tspbasil
- pepper,to taste
- 2cupsbroccoli florets
- 2cupszucchini,sliced
Instructions

In a large pot cook onion and garlic over medium heat until slightly softened.

Add carrots, cabbage, and green beans and cook for an additional 5 minutes.

Stir in bell peppers, undrained tomatoes, broth, tomato paste, bay leaves, and seasonings. Simmer for 6 to 7 minutes.

Add in zucchini and broccoli. Simmer for an additional 5 minutes or until softened.

Remove bay leaves before serving.
