How To Make Tortellini Chicken Noodle Soup

Have a hearty weeknight dinner with this noodle soup recipe made with a cozy blend of chicken, flavorful broth, and plenty of comforting cheese tortellini.

  • tbspolive oil
  • cupscarrotschopped, from about 5 medium
  • 1 cupcelerychopped, from about 3 stalks
  • 1cupyellow onionchopped, small
  • 4clovesgarlicminced
  • 58ozlow sodium-chicken broth
  • tspItalian seasoning
  • Salt and freshly ground black pepperto taste
  • 12ozthree cheese tortellinirefrigerated
  • ½cuppacked parsley
  • 3cupsrotisserie chickenshredded


  1. Heat olive oil in a large pot over medium heat, add carrots, celery, and onion then saute for 3 to 4 minutes.

  2. Add garlic and saute for 30 seconds longer. Stir in chicken broth, Italian seasoning, and season with salt and pepper to taste.

  3. Bring to a boil over medium-high heat then cover and boil for 5 minutes.

  4. Add tortellini and place parsley in a mound submerged into broth on top of tortellini the cover and boil for 6 to 8 minutes longer.

  5. Using tongs, remove parsley. Stir in chicken and cook until heated through for about 1 minute.

  6. Serve warm, topped with chopped fresh parsley leaves.
