- 2 boneless, skinless chicken breasts
- 8 cups of chicken broth
- 1 onion, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 2 cloves of garlic, minced
- 1 tsp of dried thyme
- 1 tsp of dried parsley
- 1 bay leaf
- 8 oz of egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish

In a large pot, bring the chicken broth to a boil. Add the chicken breasts and cook until cooked through, about 15-20 minutes. Remove the chicken from the broth and shred it using two forks.

In the same pot, add the onion, carrots, celery, garlic, thyme, parsley, and bay leaf. Cook until the vegetables are tender, about 10 minutes.

Meanwhile, cook the egg noodles according to the package instructions. Drain and set aside.
