Ingredients

  • 8 ounces udon noodles
  • 1 cup kimchi, chopped
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.

  2. In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.

  3. Add the chopped kimchi to the skillet and stir-fry for 3-4 minutes until heated through.

  4. In a small bowl, whisk together soy sauce, rice vinegar, and honey. Pour the sauce over the kimchi in the skillet and mix well.

  5. Add the cooked udon noodles to the skillet and toss to coat evenly with the sauce and kimchi. Cook for an additional 2-3 minutes until heated through.

  6. Garnish with chopped green onions and sesame seeds. Serve hot.
