How To Make Chicken Udon Noodle Soup

Ingredients
- 4 chicken thighs, boneless and skinless
- 8 cups chicken broth
- 2 cups sliced shiitake mushrooms
- 1 cup sliced carrots
- 1 cup sliced green onions
- 4 packs of udon noodles
- 4 tablespoons soy sauce
- 2 tablespoons mirin
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions

In a large pot, add chicken broth and bring to a boil.

Add chicken thighs and cook until they are no longer pink in the center, about 15 minutes. Remove chicken from the pot and shred into small pieces.

In the same pot, add sliced mushrooms, carrots, and green onions. Cook until the vegetables are tender, about 10 minutes.

Meanwhile, cook udon noodles according to package instructions. Drain and set aside.

Return the shredded chicken to the pot. Stir in soy sauce, mirin, and sesame oil. Season with salt and pepper to taste.
